RECIPE: ROASTED APPLE & ASPARAGUS QUINOA

This dish is extra good served with generous slivers of feta cheese and a loaf of homemade bread. And more than anything, it is easy to make! Enjoy on a hot summer day.

INGREDIENTS:

2 cups quinoa

4-6 small apples

Several handfuls asparagus spears

Splash of olive oil

Salt

HOW-TO:

  1. Bring 2 cups quinoa and 4 cups water to boil. Sprinkle in salt and let simmer fifteen to twenty minutes.
  2. As quinoa cooks, heat oven to 400. Cut apple into thin slivers and slice asparagus into small cubes. Toss with olive oil and salt in try and roast for twenty to twenty-five minutes.
  3. Once ready, combine quinoa and roasted veggies. Dress with a squeeze of lemon and eat up!
